Do you have left over Ribs? Don’t know what to do, well look no further!
Make BBQ Pulled Pork Nachos!!!
I used a 1/2 slab of left over ribs (I cook my ribs until they fall off the bone, so the meat is oh so tender!). Here is what you will need:
1/2 slab-full slab of left over ribs or used pulled pork
3 full size tomoatoes
1/2 chopped yellow onion
1/2 cup of chopped green onion
2 cups of sharp cheese
1 cup of moz cheese
1/2 cup of chopped fresh cilantro
1/2 cup of grilled corn
I simmered the pulled pork in olive oil and extra BBQ sauce for extra tenderness before throwing on the nachos. Toss the chips on a cookie sheet or in a platter to throw in the oven. I layered the chips with a light layer of cheese. Put the Pulled pork on top. Then add the tomatoes & onions. Then top with more cheese! Then I topped it off with green onions and cilantro, topped with another layer of cheese. Then finish off with the rest of the green onions, grilled corn and cilantro. Squeeze a little lime on top (You can do more or less to taste).
Cook in the oven for 20 minutes on 325*- OH so delicious! You can also top with a dollop of sour cream as well! Love sour cream!
