What to do with all these leftovers?

The Better Chip has an amazing recipe to use your leftovers! Have Squash or turkey left over? I love the recipe below and you can even add some Thanksgiving turkey pieces to it if you would like!


Thanksgiving Nachos

Want a great idea of what to do with your Thanksgiving leftovers this year?  Serve Nachos!
1 bag(6.4 oz) – The Better Chip® – Beets

1 1/2 cups kobacha or butternut squash – peeled and cut into small cubes
1 teaspoon brown sugar
Salt & pepper to taste
1 cup brussel sprouts – shredded

2 cloves garlic – minced

1 tablespoon fresh thyme – chopped

2 teaspoons chili powder

1/4 teaspoon cayenne pepper (add more if you like it spicy)

1/4 teaspoon crushed red pepper

1/2 cup dried cranberries

8 ounces gruyere or fontina cheese – shredded

8 ounces brie cheese – sliced

4 ounces gorgonzola or blue cheese – crumbled

Cranberry Syrup Sauce 

1 cup pure cranberry juice

1/4 cup cranberry sauce 

1 tablespoon brown sugar

Preheat oven to 400 degrees F


Layer serving dish (FUN TIP! – Pie tins work great – you just have to finish the leftover pumpkin pie first) with The Better Chip® – Beets.  Cover chips with 1/3 of the cheese (brie and gruyere/fontina).  Then sprinkle with 1/3 of the veggie mixture.  Repeat this 2 more times until all the cheese and veggies mixture is used.

Bake for 7-10 minutes or until the cheese is melted and bubbly.  Remove from the oven and sprinkle with gorgonzola cheese.  Serve drizzled with the Cranberry Syrup Sauce
